When I first designed the course, I was surprised to learn of the lack of any true food law textbook offerings by the publishing industry, outside of Principles of food science book intended for and written by lawyers. Interestingly, other students in my course who were not food science majors, but who were preparing themselves to go to law school, also found the course supremely helpful while being of the opinion that the numerous legal cases outlined in the law books were too detailed and did not provide enough background for them to appreciate the impact of the court decisions. This new edition retains the basic format and pedagogical features of previous editions and provides an up-to-date foundation upon which more advanced and specialized knowledge can be built. She has twice been a Carl Perkins grant recipient. Additionally, they will examine the positive and negative impacts of microorganisms on the food supply. Discussions of food safety an consumer protection including newer phychrotropic pathogens; HAACP techniques for product safety and quality; new information on food additives; pesticides and hormones; and the latest information on nutrition labeling and food regulation.

Moreover, they pointed out that they were not enough like a textbook, and so, Principles of food science book far as they were concerned, not worth the expense to simply sit on their shelf when they could find whatever information they contained by searching the internet. The book is arranged in twelve chapters, each dedicated to an important topic in food law, designed so that each chapter builds on the information presented in the preceding one. An outstanding text for students with little or no previous instruction in food science and technology, Food Science is also a valuable reference for professionals in food processing, as well as for those working in fields that service, regulate or otherwise interface with the food industry. Larry Ward taught math and science at the secondary level for 10 years. Each chapter consists of an introduction, several topical sections, conclusions, and a list of references for further study. Revised processing chapters include changing attitudes toward food irradiation, greater use of microwave cooking and microwaveable products, controlled and modified atmosphere packaging and expanding technologies such a extrusion cooking, ohmic heating and supercritical fluid extraction, new information that addresses concerns about the responsible management of food technology, considering environmental, social and economic consequences, as well as the increasing globalization of the food industry.

She has also written a multimedia and safety supplement to the food science curriculum and conducted a number of workshops on food science instruction. InDr. Special features throughout the text cover environmental issues, science facts, nutrition news, food science history, technology, recent research, international issues, and more. Other features focus on areas such as current research, technology, and nutrition news.
